snack: home baked potato chips (serves two - vegan)
dessert: homemade cupcakes!

01. 1 cup flour
02. ¾ cup sugar (or splenda)
03. ¼ cup applesauce (i suggest doing ½ oil,½ applesauce)
04. ½ cup vanilla soy milk
05. two teaspoon baking powder
06. ½ teaspoon salt
07. one teaspoon vanilla extract
08. six tablespoons of egg whites (or two eggs)
directions;
pre-heat oven to 350ºf. mix the flour, baking powder and salt; set aside. in a large bowl, mix the sugar and applesauce together well. add the eggs slowly. add the flour mixture and milk slowly until mixed well. pour into cupcake molds - be sure to spray or oil! - and bake for 25-35 minutes or when a toothpick comes out clean. buy your favorite frosting (or make one) and enjoy!
side dish: crash taters
ingredients;01. red potato's
02. extra virgin olive oil
03. salt and pepper
04. rosemary
directions;
boil the potato's in a pot of water until soft. grase up a cookie sheet with pam spray or olive oil and spread the potato's out like you would when baking cookies. mash and drizzle with the oil.
Sprinkle on salt, pepper, and rosemary. bake at 450ºf for 20-25 minutes. enjoy!

ingredients;01. four cups flour
02. one tablespoon baking powder
03. ¼ cup of butter
04. 1¹/³ cup of milk
directions;
combine the flour, baking powder, and butter, then add in the milk. roll out very thin and cut into tiny squares. poke with a fork, salt and bake at 325º for twenty minutes or until golden brown.
you can also use cookie cutters and add powdered cheese to make goldfish!
meal: veggie soup (serves 2-3)

ingredients;
01. one potato
02. sliced celery
03. chopped carrot
04. spinach
05. sliced onion
06. two squeezed lemons
07. diced tofu
08. about two cans of vegetable broth (or two cubes)
09. old bay seasoning (if not available to you, leave out)
directions;
chop up the potato's. place in pot of water and boil until soft.
add the vegetable broth, chopped carrots and celery. let boil for
about five minutes. add the remaining ingredients and set to a soft boil for another five minutes. set heat to medium and cover for about ten minutes. serve with bread or crackers. enjoy!
