
ingredients;
01. one can of vegetable/chicken broth
02. one lemon
03. ½ cup of orzo pasta
04. two egg whites (vegetarians use diced tofu)
05. salt and pepper (if desired)
directions;
mix the appropriate amount of water in a pot with your broth (see can for specific amount of water...varies depending on size of can and brand). squeeze in your lemon. add in orzo pasta. let the pasta cook. take your eggs whites - if using tofu, dice dice dice then put in your soup right away! - and place in a bowl. beat egg whites with a fork/whisk for a few minutes while the
pasta cooks. reduce heat, and slowly pour in the egg whites. allow to sit for five minutes, salt and pepper to taste (if desired) and enjoy! perfect with bakery bread!
